This first angel, known as the "giant of light", is what the Eva series' design was based on (can you see the resemblance?). It was also the cause of Second Impact - after being awakened by humans, they restored it to its original embryonic state, causing the explosion of 2000AD. The resulting embryo was brought by Kaji to NERV, when he "escorted" Asuka to Japan in episode 8. Contrary to popular rumour, it was not kept beneath NERV HQ; the giant in Terminal dogma was in fact Lilith, the second angel.
According to mythology, Adam was angel of red earth, and the first being created by God -hence it is the first angel.

Death: Destroyed by Shinji during third impact
The second angel, Lilith, was kept beneath NERV in Terminal Dogma, seemingly crucified. It originally had no lower body, but when the Lance of Longinus was removed from it (episode 22) it grew, so that by the time SEELE attacked NERV, it was fully re-grown. The Evangelions were partly made from this angel (which is why Unit-01 took part in third impact), and the Rei clones were made of cells from both Lilith and Yui Ikari. In the movie, this angel combines with Rei to create the giant Rei who takes the souls of the world into itself.
According to mythology, Lilith was the second being created by God - hence it is the second angel. Also, the Lilith of legend shamed herself in front of God, which could be the reason for the mask the angel wears during the series.

Name: Sachiel
First seen: Episode 1
Attack: Lasers from the eyes; a "lance" extended from each hand; hand-to-hand combat
Death: Destroyed by the bezerk Unit-01
This was the first angel to attack, fifteen years after second impact. It was immune to the Military's attacks (as were all the following angels), and when it finally discovered NERV HQ, Eva-01 was dispatched to destroy it. It quickly gained the advangate over the inexperienced pilot Shinji, but after being seemingly defeated, Unit-01 re-activated and went bezerk, taking advantage in the battle with ease. In a final attempt to destroy the Eva Sachiel self-destructed, but the Evangelion survived the blast.
According to mythology, Sachiel was the angel of water... hence why it appeared from the ocean near Tokyo-3, and why it had gills.
Status: Fourth angel
Name: Shamshel
First seen: Episode 3
Attack: Two whip-like extensions, which slash through anything with ease
Death: Destroyed by Unit-01 using the progressive knife
The second angel to appear and attack, it "flew" into Tokyo-3, and following Shinji's failed attempt to shoot it, it began slashing at Unit-01 with its two whip-like arms. It quickly forced Unit-01 back, as Shinji attempted to protect Touji and Kensuke, who managed to get themselves in the middle of the battle. As a last resort, Shinji took the two into his entry plug, and charged at the angel with his progressive knife. With his activation time almost gone, he stabbed the knife into the angel's core, and destroyed it just as his Eva ran out of power. This angel was the first and only one obtained as a sample for examination.
According to mythology, Shamshel was the angel of day... can't see much of a link here, except that it attacked during the daytime, and possibly the whip-arms of light.
